how to make air fryer crustless quiche
- Grease the dish: use butter to grease an oven-safe dish.
- Sauté vegetables: in a pan, sauté onion and garlic until translucent, then add spinach and cook until wilted. Remove from the heat.
- Prepare the egg mixture and combine the ingredients: whisk eggs, creme fraiche (or milk, or heavy cream), salt, nutmeg, and pepper in a bowl. Drain spinach of excess liquid, then fold into egg mixture along with the crumbled Feta cheese.
- Assemble in an ovenproof dish and preheat the air fryer: pour into the greased dish, topping with cherry tomatoes and shredded cheddar cheese. Preheat to 350°F (or 180°C) for 5 minutes.
- Air fry then serve : seal the dish with aluminum foil, piercing a hole for steam to escape. Air fry until set and golden brown on top, checking from time to time to prevent over-browning. Allow quiche to rest for at least 10 minutes before serving.

1.Too Much Liquid: If you've used a lot of high-water-content vegetables like spinach, mushrooms, or tomatoes without properly sautéing or draining them first, they can release a lot of moisture as they cook, making your quiche soggy. Always ensure you've removed excess water from veggies by sautéing or patting them dry.
2. Dense Egg Mixture: the ratio of eggs to cream or milk is essential. Too much milk or cream can cause the quiche to be soft.
3. Not Cooked Long Enough: quiches need time to set. If it's taken out too soon, the center can be a bit wet. Make sure the quiche is entirely set before removing it from the air fryer. The top should be golden, and the middle should have a slight jiggle, not be runny.
4. Foil Covering: to prevent the foil covering trapping too much steam inside and thereby making it harder for the moisture to escape hence causing sogginess, remember to pierce a few holes in the foil.
5. Temperature: ensure you are cooking at the right temperature. Too low, and it may not cook through, leaving it wet inside. Too high, and the outside might cook faster than the inside, again leaving it soggy.
6. Size and Depth of the Dish: Finally, a deeper dish might need more cooking time than a shallower one. If you're adapting a recipe to fit a different size or shape of the dish, you might need to adjust the cooking time accordingly.
If your quiche turns out soggy, you can salvage it as follows:-
Continue Cooking: place the quiche back into the air fryer or oven and continue to cook it. Check every few minutes to ensure it doesn't overcook. Also, in case the quiche was already mostly done, simply allow it to sit uncovered inside the hot air fryer for a few minutes, before setting it aside. You can also bake it under low to medium heat in the oven.
Drain Excess Liquid: If you notice a pool of liquid on the surface or around the edges of the quiche, try gently tilting the dish to allow the excess liquid to drain off. Additionally, you can also use a paper towel to blot away the moisture.
Broil the Top: If the top is not over-browned but the inside is soggy, you can set your oven to broil and cook the quiche for a few minutes. This will help evaporate some of the moisture and give the top a crispy finish.
Refrigerate and Reheat: should the quiche still be soggy even after cooling for a while, place it in the refrigerator. Often, the quiche will firm up after being refrigerated. When you're ready to eat, reheat it in the oven or air fryer. This can help reduce the moisture content and make it firmer.

Air Fryer Crustless Quiche

Ingredients
- 1 tablespoon butter or margarine for greasing the dish
- 1 tablespoon olive oil (or preferred choice of cooking oil)
- ½ small onion finely diced or finely sliced
- 2 cloves garlic minced
- 2 cups fresh spinach trimmed and properly washed
- 5 large eggs
- ⅔ cups Creme fraiche, milk, or heavy cream
- ¼ teaspoon salt (use more or less, to taste)
- a pinch of nutmeg (optional)
- a pinch of black pepper (use more or less, to taste)
- 85 grams Feta cheese (crumbled - approximately 3 oz)
- 8-10 cherry tomatoes halved
- 1 cup sharp cheddar cheese
Instructions
- Grease an oven-safe dish with butter.
- Heat oil on medium heat in a large pan. Saute the onion and garlic until translucent.
- Add the spinach, stir, and cook until it’s wilted, stirring from time to time. Once the spinach has wilted, remove the pan from the heat and set it aside.
- In a bowl, whisk the eggs, creme fraiche (or milk or heavy cream), salt, nutmeg, and pepper. Drain away any excess liquid from the spinach. Fold in the cooked spinach, top with the crumbled Feta cheese then combine.
- Pour the egg mixture into the oven-safe dish. Top with halved cherry tomatoes and shredded cheddar cheese.
- Preheat your air fryer at 350°F (or 180°C) for 5 minutes. While the air fryer is preheating, cover and seal the dish with aluminum foil, making sure to pierce a few holes in the foil to allow the steam from cooking to escape.
- Air fry for 30-50 minutes, or until set and golden on top, checking every 15 minutes to ensure it does not overbrown. Once cooked allow your air fryer quiche to rest for at least 10 minutes before serving. (See notes below).
