Chicken Cacciatora, also known as "Pollo alla Cacciatora"; cacciatore, or "hunter's chicken," is a rustic, hearty dish that you are sure to find in almost every Italian home.

The name derives from the Italian word "cacciatore," meaning "hunter," and refers to a meal prepared "hunter-style" with chicken pieces, onions, garlic, herbs, tomatoes, veggies - often bell peppers, and wine.

Chicken cacciatora varies by region and family in Italy, with some variations incorporating olives, capers, or a splash of red or white wine to enhance its flavor.

Serve chicken cacciatore with:-

  • polenta.
  • spaghetti, orzo, or other types of pasta (see our pressure cooker spaghetti recipe here).
  • some crusty bread to mop out the sauce.
  • rice.
  • salads - I love to serve this dish with some lamb's lettuce salad
  • alternatively, try something new and serve it with some roti!

If desired, you can thicken the sauce as follows:-

  • Remove the chicken from the slow cooker then:
    • Simmer the sauce using the slow cook function for 1 hour or,
    • Use a cornstarch slurry by mixing 1 tablespoon of cornstarch with 1 tablespoon of water and stir it into the sauce.

useful tips

  • Feel free to use red wine in place of the white wine.
  • Add potatoes to make your slow cooker chicken cacciatora a complete meal.
  • Store leftover chicken cacciatora in an airtight container in the fridge for 3-4 days.
  • For longer storage, let the chicken cool completely before freezing it in an airtight container or freezer bag. It will keep in the freezer for up to 3 months. When you're ready to eat it again, thaw it overnight in the refrigerator and reheat it on the stovetop or in the oven.
  • I used the slow cooking function of the Ninja Foodi Multi-cooker, feel free to use the Possible Cooker, Crockpot, or your favorite slow cooker!

Slow Cooker Chicken Cacciatora

Ingredients
  

  • 2.2 lb chicken (approx. 1kg), cut into large pieces use any bone-in chicken cuts such as legs or thighs
  • 3-4 tablespoon all-purpose flour
  • 2-3 tablespoon olive oil or your preferred choice of vegetable oil
  • 1 small onion finely diced, or julienne sliced
  • 2-3 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 1 peeled carrot finely diced, or julienne sliced
  • 1 sweet deseeded yellow or red bell pepper core removed and finely diced, or julienne sliced
  • 1 celery stick diced
  • 5 fl oz white wine (or 150 ml)
  • 7 oz canned tomatoes (or 200g) alternatively, use halved cherry tomatoes.
  • 2 tablespoon capers
  • ¼ cup low-sodium chicken stock (or broth)
  • a handful chopped parsley to garnish (optional)

Instructions
 

  • Clean the chicken in cold water then pat dry (see notes).
  • Transfer the flour to a plate, add ½ teaspoon salt then mix to combine.
  • Coat the chicken pieces on both sides with the flour mixture, shaking off any excess flour.
  • Using a pan, or the pot of your Ninja Foodi set to the sauté function, heat the oil until it is hot.
  • Brown the chicken, skin-side down. Flip, then brown on the other side. Transfer to a plate and set this aside.

  • Saute onion and garlic until translucent then add the carrot, bell pepper, and celery stick. Stir to combine.

  • Next, add the white wine and scrape the bottom of the pan or pot to loosen any browned bits (deglaze it).

  • Add the tomatoes, mix, then add the chicken, capers, and chicken stock. Season with salt and pepper, then spoon some of the sauce on top.

  • Cover the slow cooker. Make sure the lid is set to seal, if using the Ninja Foodi Multi-cooker. Slow cook on low for 6 hours or on high for 3-4 hours.
  • Once the time is up, check and adjust the seasoning as necessary, then garnish with chopped parsley (optional). Serve chicken cacciatora with crusty bread, pasta dishes, rice, or as preferred.

Notes

  • To prevent the spread of Salmonella, cleaning chicken is generally not recommended. However, I have included this step for those who prefer to practice it. Feel free to skip this step.
  • I used the slow cooking function of the Ninja Foodi Multi-cooker, feel free to use the Possible Cooker, Crockpot, or your favorite slow cooker!
