These air fryer honey roasted carrots are a tasty side dish you’ll love! Perfectly seasoned, they’re great for weeknight dinners, special holidays, meal-prep, and more!

- medium- sized carrots - I use 2 pounds of medium-sized carrots for this recipe (so about 8 carrots).
- unsalted melted butter - You can substitute this with an equal amount of margarine.
- honey - This can be substituted with maple syrup.
- salt and pepper to taste.
- chopped herbs - Use a few tablespoons of chopped parsley, chives, basil, or your preferred herbs to garnish. This is optional.
- juice of half a lemon (optional) - To drizzle on top of the cooked carrots.
how to make honey roasted air fryer carrots
We start by peeling the carrots. This is an optional step but I find it helps give the carrots a more even texture and better presentation.
In case you skip the peeling, rinse them to remove dirt. I recommend patting them dry after rinsing, to ensure the seasoning coats the carrots properly.
We then cut the carrots diagonally, so each piece is about ½″ (1.25cm) thick at the widest part. Try to cut them in the same size so they roast evenly.
Place the carrots in a large, bowl then add melted butter, honey, salt and pepper. Toss to ensure the carrots are properly coated with the seasoning.
Next, we transfer the carrots to the air fryer basket. Depending on the size of your air fryer, you may need to work in batches to avoid overcrowding and ensure even cooking
Set the temperature to 375°F (190°C) and cook for 8 to 10 minutes, or until you reach your preferred crispiness. Shake the basket 1-2 times in the course of cooking, so the carrots cook evenly.
Once cooked, transfer the carrots to a bowl, top with lemon juice and garnish with fresh herbs (if using). Serve while still warm.

Allow the roasted carrots to cool completely before storing then store as follows:-
- In the fridge: Store in an airtight container in the refrigerator for up to 3-4 days.
- Freezing: While you can freeze them in an airtight container for up to 6 months, I do not recommend this as the carrots tend to get mushy once thawed.

You can reheat the carrots using the air fryer, microwave, or on the stovetop as follows:-
- Reheating using the air fryer: To reheat, place in the air fryer at 350°F (175°C) for 5-7 minutes, or until warmed through.
- Microwave reheating: Place carrots in a microwave-safe dish, cover, and heat on medium power for 1-2 minutes, stirring halfway through.
- Stovetop reheating: Heat in a pan over medium heat with a small amount of oil or butter, stirring occasionally for 3-4 minutes until warmed through.
variations
- Add a tablespoon of balsamic vinegar before air frying for some tang.
- Make it spicy by adding a teaspoon of red chilli flakes, or your favorite spicy seasonings.
