what type of walnut oil to use
You can choose to use either cold-pressed or roasted walnut oil. Roasted walnut oil, which I use in this recipe, has a richer, nuttier flavor, making it perfect for salads.
Cold-pressed walnut oil, which is extracted without the use of heat thereby preserving more of the oil's natural flavor, aroma, and nutritional content, is also a great option.
substituting the honey
- Maple syrup: This provides a similar sweetness with a distinct flavor.
- Date Syrup: Has a rich and slightly caramel-like taste, and will add depth to your dressing.
- Brown Rice Syrup: This is less sweet than honey, and has a mild flavor.
- Molasses: This has a strong flavor. I recommend using it sparingly, to avoid overpowering the dressing.
- Stevia: A calorie-free option, use in small amounts due to its high sweetness.
adapt the dressing to your taste
- Add more lemon juice for more tang.
- For a sweeter dressing, use more honey or add a splash of orange, pineapple, or apple juice.
- Add more water for a lighter salad. Add one cooked egg yolk, for a thicker dressing, with a richer and creamier consistency.
storing it
Transfer the dressing to sterilized bottles and keep it in the fridge for 1-2 weeks.
