ingredients
This is a summary. A detailed ingredient list has been provided at the bottom of this page.
- apples - you can make dehydrated apple chips with or without peeling the apples. If you choose not to peel, then choose organic apples if possible, and make sure to check on how they have been grown to avoid possible contamination from pesticides. As always, you also want to clean your fruit before using it to cook.
- cinnamon - you can also use other spices such as nutmeg or pumpkin spice.
- fresh lemon juice and some water- to make the acidulated water (pre-treatment). While pretreatment is an optional step, it helps prevent the apple slices from turning brown.
how to make Ninja Foodi dehydrated apples
Here is a simple breakdown of how to make dehydrated apple chips using your Ninja Foodi, using the dehydrator function. See below for how to make apple chips using your air fryer, if it does not have an inbuilt dehydrating function. This is a summary, a more detailed recipe card has been provided at the bottom of this page.
Wash and dry the apples. Using a mandolin slicer or a knife, thinly slice the apples to between ⅛ inch and ¼ inch thick, so they can dry properly. Next, make a pretreatment solution (acidulated water) by combining lemon juice or vinegar with water, and soaking the apple slices in it for at least 10 minutes.
Drain off the pretreatment solution, place the apples on a baking tray, and pat dry using a kitchen towel. Make sure you have pat-dried them properly before dehydrating them to enable them to dry faster.
Place the apple slices on top of the dehydrator tray or rack and sprinkle some cinnamon on top. You can also sprinkle them with cinnamon once they have cooked. Carefully place the rack inside your Ninja Foodi, making sure there is some space between the slices to enable air to circulate properly. Close the lid, and air fry using the dehydrator function at 135°F for 8-10 hours, checking at every 3-hour interval. They should feel dry and have a crispy texture once done.
Once the apple slices are dry, switch off the dehydrator and remove the racks. Allow the apple slices to cool to room temperature, then transfer the apple slices to a bowl. Sprinkle with some cinnamon (optional), then serve or transfer them to airtight jars or containers, properly labeled with a best-by date. Store in a cool, dry, and dark place.
how to make air fryer dehydrated apple chips (no dehydrator function)
Wondering how to dehydrate using your Ninja Foodi or any brand of air fryer without the dehydrate function? Then follow the following steps:-
- wash the apples. Using a knife or a mandolin slicer, thinly and evenly slice your them, sized as described in the recipe card below. The slices should not be more than ¼ inch (approximately 6.4 mm).
- lay the apple slices in your air fryer basket without overlapping, and air fry at 350°F (180°C) for 8-10 minutes, flipping midway through cooking. Feel free to air fry them 2-3 minutes longer, if they are not done to your liking.
- once done, remove the basket from the air fryer, and allow the chips to cool completely. They will crispen up some more as they cool.
- store appropriately or serve.
how to make dehydrated apples in the oven
- preheat your oven to 200°F (93°C).
- wash and dry the apples, then thinly and evenly slice them between ⅛ inch and ¼ inch thick.
- place them in a single layer, on a parchment paper-lined baking tray and sprinkle some cinnamon evenly on top.
- bake them for 2 hours, making sure to turn each slice over, halfway through baking.
- test if the apples are ready after 2 hours; have them sit in the warm baking tray for 5 minutes. They should feel crispy if ready. Otherwise, continue drying them in 15-minute increments until you get your desired level of crispiness.
- once done, allow the apple chips to cool completely before serving or storing them in airtight containers.
preservation - how long do dehydrated apple chips last?
Keep your dehydrated apples in a cool, dry, and dark area in your home away from direct sunlight for 4 months to 1 year (recommended storage times by the National Center for Home Food Preservation). How long they can keep will depend on the storage temperature; the lower the temperature, the higher the storage time, and vice versa.
useful tips
- If using waxed apples, rub a little vinegar on the surface to help remove the wax.
- Slice the apples to the correct size. They should be between ⅛ inch (about 3mm) thick and not more than ¼ inch (approximately 6.4 mm) thick if you want them to dry properly.
- If you choose to pretreat your apples, make sure to properly dry the apple slices with a cloth before dehydrating, so they dehydrate quicker.
- Place the apple slices in a single layer in your dehydrating rack, and do not overcrowd them. Cook in batches if necessary.
- The time it takes to dehydrate apple chips will depend on how thin or thick you slice them, how well you dry the apples before dehydrating, as well as the humidity levels in the air around you. So feel free to adjust the time accordingly.
- You will know the apples are done when they develop a crispy and dry texture.
frequently asked questions
Basically, any type of apple can be dehydrated. Just bear in mind that the sweetness flavor tends to intensify once dehydrated.
Use tart apple varieties such as Granny Smith, Gala, and McIntosh if you prefer your apple crisps less sweet.
For sweeter dehydrated apples, use sweet varieties such as Fuji, Kiku, SweeTango Apples, Honeycrisp, and Golden Delicious. These have a higher natural sugar content making them perfect for snacking or using in dessert or breakfast recipes.
Does your dehydrated fruit feel soft and not crunchy? Here are a few possible reasons why.-
•Pat dry your fruit before dehydrating. This is optional but helps them to dry quicker.
•Make sure you have the right temperature and do not attempt to dry too quickly. Also, make sure to place your fruit in a single layer on your air fryer or dehydrating rack without overlapping. If your dehydrated apple chips feel sticky and spongy they are not done. Dehydrate them longer.
•You will know your apple chips are done when they are no longer sticky or soft. You can check by cutting a few pieces in half, and then squeezing them. There shouldn't be any moisture if done. Also, bear in mind that the higher the sugar content the longer the food will take to dry. Some types of fruit, such as pineapples remain sticky even when properly dehydrated.
•Set up your dehydrator in a warm and dry place away from air vents or windows. This is because indoor humidity and air conditioning affect the way food dehydrates, resulting in a higher dehydrating time.
•Allow your apple chips to cool completely before storing them in air-tight jars.

Video
Equipment
Ingredients
- 2 apples
- ½ teaspoon cinnamon (more if preferred)
- 1½ tablespoon lemon juice or white vinegar (to make the pretreatment solution)
- 1 quart /liter of water (to make the pretreatment solution)
Instructions
- Wash and dry the apples. Using a mandolin slicer or a sharp knife, slice the apples thinly and evenly between ⅛ inch and ¼ inch thick, so they can dry properly.
- Make a pretreatment solution (acidulated water) by combining the lemon juice or white vinegar with one quart (approximately one liter of water) and soak the apple slices in it for 10 minutes. Drain off the pretreatment solution, place the apples on a baking tray, and pat dry using a kitchen towel. Make sure to dry them properly before dehydrating them to enable them to dry faster.
- Place the apple slices on top of the dehydrator tray or rack in a single layer without overlapping and sprinkle some cinnamon on top. You can also sprinkle the cinnamon once they have dehydrated if you prefer a less intense flavor. Make sure there is some space between the slices to enable air to circulate properly. Carefully place the rack inside your Ninja Foodi.
- Set your Ninja Foodi to the dehydrator function at 135°F (57.2°C), close the lid, and set the time to 8 hours (see notes for how to air fry if your air fryer does not have the dehydrator function).
- Dehydrate the apples, quickly checking on them at every 3-hour interval until they develop a crispy texture and feel dry to the touch. Dehydrate them for a shorter amount of time, if you prefer your apple chips leathery.
- Once the apples have dried, switch off the dehydrator and remove the rack. Allow the apple slices to cool to room temperature.
- Once cooled, transfer the dehydrated apple chips to a bowl. Sprinkle with some cinnamon on top (optional) then transfer them to airtight jars or containers, properly labeled with a best-by date. Store in a cool, dry, and dark place.
