Cottage Cheese Pesto Avocado Toast

Make this pesto cottage cheese avocado toast, for an easy, healthy, and protein-packed breakfast.

This is one of my favorite ways to start the day. Protein-packed, easy, and quick to make, this cottage cheese avocado toast makes the perfect breakfast.

Most of us just do not eat enough protein. Which is a sad thing, when you think about how important it is. This recipe is such an easy and delicious way to get more protein in your diet!

🥘ingredients you will need:-

  • sliced bread - I like to use sourdough bread because of its health benefits. Feel free to use keto bread, regular toast, or your favorite bread.
  • pesto.
  • cottage cheese - use full-fat cottage cheese.
  • avocado - use ripe but firm avocado.
  • cold smoked salmon slices.
  • salt and pepper.
  • garnishing (optional) - I used red pepper chili flakes, feel free to garnish with a squeeze of lemon juice, chopped dill or parsley, or with some sliced red onion.

⏲️how to make it

  1. Toast a slice of bread to your taste.
  2. Spread pesto evenly on the bread.
  3. Evenly spread cottage cheese on top of the bread, then top with avocado.
  4. Sparingly season with salt and pepper, then top with cold-smoked salmon slices.
  5. Garnish with a sprinkle of red pepper flakes, chopped chives or parsley, or your choice of garnishings (optional).

Refrigeration

If you want to make your toast ahead, it's best to keep it in the fridge as soon as possible, so it maintains its freshness.

Place it in an airtight container to prevent the avocado from browning. Store it in the fridge for up to 1 day.

Once you are ready to eat, freshen it up with a drizzle of lemon juice over the avocado. I like to leave out my toast for a few minutes in advance on the countertop, so it is not too cold when eating.

Freezing

Freezing avocado toast is not recommended as the avocado can become watery and lose its creamy texture. However, if you wish, you can freeze the bread separately and prepare the toppings fresh when ready to serve.

For even more protein, I like to use some high-protein bread instead of regular bread.

Spread some cottage cheese on your toasted bread then top with either of the below delicious toppings:-

  • Use boiled, or scrambled eggs. Poached eggs work great too!
  • Top your toast with berries and honey, or some maple syrup.
  • Peanut butter.
  • Sliced banana and cinnamon.

Cottage Cheese Pesto Avocado Salad

Ingredients
  

  • 1 slice toast bread (or your favorite sliced bread)
  • 1 tablespoon pesto
  • ¼ cup cottage cheese
  • ¼ sliced avocado (use ripe but firm avocados)
  • 1-2 oz cold smoked salmon slices - approximately 28g-56g
  • salt and pepper - to taste
  • red pepper chili flakes - optional, to garnish

Instructions
 

  • Lightly toast the bread to your desired crispiness.
  • Spread pesto evenly on the toast.
  • Spoon cottage cheese on top of the pesto, spreading gently.
  • Neatly arrange avocado on top of the cottage cheese then sparingly season with salt and pepper (see notes).
  • Place cold-smoked salmon on top of the avocado slices.
  • Garnish with a sprinkle of red pepper flakes, or your choice of garnishings. (see notes)

Notes

  • Smoked salmon tends to be salty so I recommend using salt sparingly.
  • Other garnishing you can use include lemon juice, dill, parsley, or sliced red onion.
