Add all the ingredients (with exception of the poppy seeds) to a large bowl and blend with an immersion (hand) blender until smooth. Alternatively, use a regular blender or high-speed food processor.
Add the poppy seeds, then stir to combine. Don't forget to scrape out the sides!

- 1 teaspoon honey or maple syrup
- salt and pepper to taste
- 1½ tablespoon poppy seeds
Instructions
- Add all the ingredients, except the poppy seeds, to a large bowl and blend with an immersion hand blender until smooth. Alternatively, use a high-speed blender or food processor.
- Process until smooth, stopping to scrape out the sides. Stir in the poppy seeds.
- Transfer the dressing to an airtight container and keep in the fridge for 5-6 days.
