    Here are the ingredients you will need to make this recipe:

    • salted peanut butter - while you can also use unsalted peanut butter, I find the salted one adds a wonderful flavour. Feel free to use creamy or chunky peanut butter, depending on what you prefer. Also, I recommend using all-natural peanut butter if on a special diet.
    • oatmeal or oat flour - use oatmeal if you prefer your cookies to have some texture to them, or simply use oat flour for a finer texture. (You can make your own oat flour by grinding rolled oats using a coffee grinder).
    • maple syrup - alternatively, use agave syrup, coconut syrup, or honey.

    Chef's Tip: Make these cookies special diet and allergy friendly as follows:- use certified gluten-free oatmeal or oat flour, to make gluten free cookies. You can also make them nut free by using a nut-free butter, such as sunflower seed butter. To make them keto and low-carb, simply substitute the oat meal or oat flour for almond flour and the maple syrup for sugar-free maple syrup.

    I used the Ninja Foodi Air Fryer and Multi-Cooker for this recipe, but feel free to use your favorite brand of Air Fryer.

    Combine oatmeal (or oat flour), maple syrup and peanut butter in a bowl. For best results, allow the dough to chill in the fridge for at least 30 minutes.

    Use two spoons or a cookie scoop to scoop out pieces of dough to a tray or plate.

    Use a fork to make diagonal marks on the surface of the cookies, then transfer them to the air fryer basket.

    Air fry until lightly golden brown and done. Remove the basket from the air fryer and make sure to cool the cookies before serving.

    storage instructions

    Store these no-egg Air Fryer peanut butter cookies in an airtight container for 3-5 days; but make sure to store them only after they have completely cooled down.

    You can freeze the dough for up to 3 months by making dough balls and freezing these in a single layer on a baking sheet, then transfering the frozen balls to a heavy-duty zip-top plastic bag. To use, simply thaw at room temperature for 10 to 15 minutes, shape, then bake.

    Ingredients
      

    • ½ cup salted or unsalted peanut butter (use creamy or chunky peanut butter, as preferred)
    • ⅓ cup maple syrup (alternatively, use agave syrup, honey, or coconut syrup)
    • ¾ cup oatmeal or oat flour

    Instructions
     

    • In a mixing bowl, combine peanut butter, maple syrup, and oatmeal or oat flour. For best results, allow the dough to chill in the fridge for at least 30 minutes.
    • Using a 1 oz cookie scoop (about two tablespoons), scoop out some cookie dough onto a parchment paper-lined tray or plate. Use a fork to make diagonal patterns on the surface of the cookies.
    • Next, place a suitable parchment paper at the bottom of your Air Fryer basket. Use a spatula to transfer the cookies to the basket.
    • Air Fry at 400°F (200°C) for 4-5 minutes until lightly golden brown. Once done, remove the basket from the Air Fryer and allow the cookies to cool for a few minutes, before transferring them to a cooling rack.
    • Once cooled, serve your air fryer peanut butter cookies with some milk or keep them in an airtight cookie jar for 3-5 days.

    what is the difference between oatmeal, oat flour and oat fiber?

    Oatmeal and oat flour are both made from whole oat groats and therefore have the same nutritional profile. The difference between the two comes from the milling or grinding. Oat flour is more finely ground and has a finer texture than oatmeal.
