    • very ripe medium to large bananas -the best bananas to use are the ones that are extremely ripe (see the segment below on how to ripen bananas quicker for cooking).
    • butter - at room temperature.
    • medium-sized eggs - also at room temperature.
    • brown sugar - while you can also use regular white sugar, I recommend using brown sugar as it gives the banana bread a rich flavor and contributes to a wonderful brown color.
    • all-purpose flour.
    • spices, seasoning, aroma, and leavening - cinnamon (optional), baking soda, vanilla extract, and a pinch of salt.
    • other - chopped walnuts and chocolate chips.

    ripen bananas quicker

    Okay, you probably know by now that the best bananas to use for banana bread are the over-ripened, dark-brown kind which is almost turning mushy. So, what do you do if your bananas are not ripe enough and you want to make banana bread? Simply bake the bananas on a lined baking sheet at a temperature of 250°F(120°C) for 10 to 15 minutes.

    You could also place the bananas in a paper bag and leave them out on the countertop to ripen for a day or two, if not pressed for time. Place an apple inside the bag to speed up this process.

    1. Lightly roast walnuts in a pan or skillet, set aside to cool, then chop to smaller sizes. Preheat your air fryer to 325°F or 165°C.

    1. Using a medium-sized bowl, cream together the butter and sugar. Mash the bananas to a puree, then add this along with the eggs, to the bowl to create a batter.
    2. Combine the all-purpose flour, cinnamon, baking soda, and salt, in a separate bowl then add this to the bowl with the batter. Add the vanilla extract, chopped walnuts, and chocolate chips.
    1. Grease a loaf pan or tin and pour the batter inside.
    2. Air fry until properly browned outside and a toothpick inserted in the center comes out clean.

    Serve your air fryer banana bread with some butter, ricotta and berries, chocolate spreads, peanut butter, yoghurt, jam and jellies, such as this delicious dandelion jelly.

    storage instructions

    • Keep leftovers tightly packed in plastic wrap and store this at room temperature for up to 2-5 days.
    • You can also store the banana bread wrapped in a suitable airtight container, in the refrigerator for up to a week.
    • Freeze banana bread slices wrapped in aluminum foil or freezer-friendly bags for 2-3 months.

    • Do not overmix, or else your banana bread will end up dense and chewy.
    • If using a glass loaf pan, reduce the temperature by 25 degrees Fahrenheit.
    • If the bread is getting too brown during air frying before it is totally done, then cover the baking pan or form loosely with aluminum foil and continue to air fry until done.
    • Do not overcook; different air fryers cook differently. In this regard, check on your banana bread mid-cooking and make adjustments to the cooking time if necessary.
    • Store the cooked loaf properly to prevent it from drying out too quickly.

    Ingredients
      

    • 3 over-ripe bananas
    • ½ cup (1 stick) butter at room temperature
    • 2 medium-sized eggs (at room temperature)
    • ¾ cup brown sugar
    • 1½ cups all-purpose flour
    • ½ teaspoon cinnamon (optional)
    • 1 teaspoon baking soda
    • pinch of salt
    • 1 teaspoon vanilla extract
    • 1 cup chopped walnuts
    • ½ cup chocolate chips (use one cup if you prefer more of a chocolatey loaf)

    Instructions
     

    • Lightly roast walnuts in a pan or skillet then set aside on a plate to cool. Chop the walnuts to a smaller size.
    • Preheat your air fryer to 325°F or 165°C. Using a medium-sized bowl, cream together the butter and brown sugar. Use a fork to mash the bananas to the consistency of baby food, then add this along with the eggs, to the bowl with the butter and sugar to create a batter.
    • Using another bowl, combine the all-purpose flour, cinnamon, baking soda, and salt, then add this to the bowl with the batter. Add the vanilla extract and whisk to combine.
    • Stir in the chopped walnuts and chocolate chips then grease your loaf pan or tin. Pour the batter into the greased pan and air fry for 20-25 minutes or until a toothpick inserted in the center comes out clean.
    • Once cooked, allow your banana bread to rest for at least 15 minutes before transferring it to a wire cooling rack.

    Notes

    • Do not overmix, or else your banana bread will end up dense and chewy.
    • If using a glass loaf pan, reduce the temperature by 25 degrees Fahrenheit (approximately 4 degrees Celcius).
    • If the bread is getting too brown during air frying before it is totally done, then cover the baking pan or form loosely with aluminum foil and continue to air fry until done.
