I know beets are one of those vegetables you either love or you don't. In my case, I love them, and I suspect you do too.

using foil to roast beetroots

Air frying beets in foil locks in moisture and helps them cook evenly. It is a simple method that gives you soft, fork-tender beets without drying them out. It also helps with clean-up as it prevents the beet juices from running in the air fryer.

Once cooked, you can slice, cube, or use them in salads, bowls, or as a side dish.

ingredients

  • Fresh whole beets - any variety.
  • A little olive oil - this helps them roast properly.
  • Salt to taste - you can also add some pepper if preferred.

how to make air fryer beets in foil

  1. Start by washing the beets thoroughly to remove any dirt. Trim off the leafy tops and the thin root tail if attached.
  2. Pat the beets dry, then place them on a large sheet of aluminum foil. Drizzle with olive oil and season with salt and pepper.
  3. Wrap the foil tightly around the beets to form a sealed packet. Make sure it is fully enclosed so the steam stays inside.
  4. Preheat your air fryer to 190°C or 380°F. Place the foil packet in the basket with the opening at the top and cook for about 40-45 minutes, or until a knife slides easily into the center of the beets.
  5. Carefully open the foil, allow the beets to cool slightly, then peel if desired. The skins should rub off easily once cooked.
  6. Serve with your favorite dishes!

checking for doneness

To check if your beets are done, carefully open the foil and insert a sharp knife into the center of the largest beet.

If the knife slides in easily with little resistance, they are ready. If it still feels firm in the middle, wrap them back up and cook for a few more minutes before checking again.

serve them with

  • Grilled or roasted chicken
  • Air fryer salmon
  • Goat cheese and arugula salad
  • Tahini yogurt dressing
  • Halloumi Chickpea Salad
  • Couscous or quinoa bowls
  • Roasted vegetable platters

You can also season it with your favorite seasonings.

storing your leftover beetroots

Allow the beets to cool completely before storing.

Store in an airtight container in the refrigerator for up to 4 days. You can keep them whole or slice them before storing.

To reheat, microwave or warm in the air fryer at 180°C or 350°F for 5 minutes, until heated through.

Cooked beets can also be frozen for up to 3 months. Freeze whole or sliced in a sealed container. Thaw overnight in the fridge before reheating.

frequently asked questions

Do I have to peel the beetroots?

No, you do not need to peel beets before air frying them. In fact, it is easier to leave the skin on while they cook.

Once they are tender, the skins will rub off easily with your fingers or a paper towel. If you prefer, however, you can also peel them with a small knife before cooking.

Can I individually wrap the beets in foil?

Yes, you can wrap each beet individually in foil. This works well if your beets are different sizes, as they may cook at slightly different rates.

Just check each one for doneness and remove the smaller ones earlier if needed.

Can I add some water?

Yes you can. Adding a small amount of water to the foil packet helps create steam inside as the beets cook.

This keeps them from drying out and helps them become tender all the way through. It also prevents the bottoms from browning too quickly before the centres are fully cooked.

How do I avoid staining?

Beets can stain hands, cutting boards, and cloth. To prevent this, wear kitchen gloves when handling them and use a non-porous cutting board.

Wipe surfaces right away, and rinse knives and boards soon after use. If your hands do stain, rubbing them with lemon juice and a little baking soda can help lift the color.
