The ingredients are pretty similar to my Air Fryer Banana Bread recipe. Here is what you will require:-
- medium to large ripe mashed bananas - the best kind of bananas to use are the ones that are extremely ripe and whose skin has brown spots or has already turned brown.
- olive oil - you can substitute this with coconut oil if you prefer.
- room-temperature, medium-sized eggs.
- sugar - while I used regular white sugar, I recommend using brown sugar if you prefer a sweeter and richer taste.
- all-purpose flour - you can make this recipe gluten-free by using gluten-free all-purpose flour.
- spices, seasoning, aroma, and leavening - cinnamon (optional), baking soda, baking powder, vanilla extract, and a pinch of salt.
- chopped roasted walnuts and chocolate chips.

- Preheat your air fryer for five minutes at 320°F or 160°C. Cream together the butter and sugar.
- Combine the mashed bananas with the eggs, olive oil, sugar, and vanilla extract.
- Mix in the rest of the ingredients to obtain a smooth batter.
- Fill silicon muffin cups ¾ way to about full, with the prepared batter.
- Air fry until properly browned outside and a toothpick inserted in the center comes out clean.

Using a temperature of 320°F (160°C), muffins need 15-17 minutes to cook in the air fryer. The best way to tell whether the muffins are done is to insert a wooden toothpick into the centre of one of the muffins. The toothpick should come out clean or with just a few crumbs. If you realise that your muffins are not done, simply air fry them longer, checking at each 2-3 minute interval. Also, seeing that different air fryers cook differently, bear in mind that you may need to adjust the time accordingly by a few minutes, depending on the age, size, and power of your air fryer.

- Muffins made using the air fryer tend to turn brown more quickly than in a conventional oven. If you notice that the muffins are too brown before they are totally cooked, simply reduce the temperature of your air fryer and cover them with aluminum foil.
- It is okay to use paper or silicon muffin liners as long as they can withstand a temperature of at least 400°F (204°C).
- Air fryers differ and will, therefore, cook differently so be ready to adjust the time accordingly, depending on the size, model, and even power of your air fryer.
- Seeing that these muffins contain fruit, it is important to store them properly so they do not end up developing mold or drying out altogether.
refrigeration and freezing
- store the muffins in airtight containers in the fridge for 3-4 days.
- To freeze, wrap in sealable containers and keep in the freezer for up to three months. To use from frozen, simply allow the muffins to thaw overnight in the fridge, then warm them for 1-2 minutes using your microwave or air fryer at 160°C /320°F.

- ½ cup sugar
- ½ cup olive oil
- ½ teaspoon cinnamon

- 1 teaspoon baking powder
- ½ teaspoon baking soda
- pinch of salt
- ½ chopped walnuts (or your preferred nuts)

Instructions
- Preheat your air fryer at a temperature of 320°F (160°C) for 5 minutes.

- Divide the batter equally into muffin forms and carefully place these inside your air fryer basket. Air fry at 320°F (160°C) for 17 minutes or until a toothpick inserted in the middle comes out clean.
