  • coconut milk - this adds creaminess to the soup and is a great alternative to those who prefer their pumpkin soup with no cream.

what are the best pumpkin varieties to use?

Use simple, old-fashioned varieties such as Fairytale, Sugar Pumpkin, or Cinderella Pumpkin. These pumpkins are chosen for their rich flavor and smooth texture, making them perfect for a creamy soup. They blend well with spices and enhance the soup's overall taste.

how to make soup maker pumpkin soup

I used my Ninja Foodi soup maker and blender for this recipe but you can easily make this soup using other types of soup makers. Here is how to make it:-

  1. Saute: For enhanced flavor, saute onion and garlic in olive oil using your soup maker's saute function, or in a pan.
  2. Cook: Add pumpkin, vegetable stock, salt, and pepper. Close the lid and select the smooth soup setting.
  3. Add coconut milk: Once ready, add coconut milk, close the lid, and blend for 15 seconds.
  4. Serve: Pour into bowls, garnish, and serve.

❄️Refrigeration and Freezing: To store, first allow the soup to cool completely. Transfer it to an airtight container, and keep it in the fridge for 3-5 days, or in the freezer for up to 3 months.

can I make my soup thinner?

I always recommend starting with a thicker soup. Remember, it is much easier to save a thicker soup than a thinner one, as all you need to do is add more stock or water to suit your preference.

Also, a thicker soup takes up much less space in the fride, especially when making the soup for meal-prep.

Ninja Foodi Soup Maker and Blender

Ingredients
  

  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 small onion chopped
  • 1 medium pumpkin (approximately 700g - about 1.5lbs) peeled, deseeded and roughly chopped
  • ¼ cup vegetable stock (or 59 ml) use ½-1 cup if you prefer your soup thinner (see notes below)
  • salt and pepper to taste
  • 1 can coconut milk (approximately 14oz or 400ml)

Instructions
 

  • To improve the flavor, cook the onions and garlic in olive oil before adding them to the soup maker. You can either use the saute function if your soup maker has one or cook them in a pan. (see notes below).
  • Add the pumpkin, vegetable stock, salt and pepper. Place the lid on, ensure it is properly sealed, and select the smooth soup setting.

  • When the soup is ready, add the coconut milk, place the lid on, then press blend for 10-15 seconds to combine.

  • Pour the soup into bowls, garnish as preferred, then serve.

Notes
