ingredients you will need

Olive oil, onion and garlic kick off our soup-making process; salt, pepper, and cumin are our seasonings of choice but paprika works great too, if you are not a fan of cumin.

And as you can guess by the name, carrots take the centre stage. Both regular orange carrots and baby carrots work well here. Baby carrots are sweeter and more tender, while regular carrots are more robust in flavor.

If you can get your hands on organic carrots, then do so by all means as organic carrots often tend to have a more pronounced carrot flavor compared to non-organic ones.

As with most soups, we are going to be using some liquid to cook the soup in, I use vegetable stock, feel free to use chicken stock if you prefer.

I use fresh coriander as it gives the best flavor profile, but let me not stop you from using a teaspoon of coriander powder, as a substitute.

I made this carrot soup using my Ninja Foodi Soup Maker and Blender, but it can be made using any soup maker!

👩‍🍳how to make soup maker carrot and coriander soup

To make soup maker carrot and coriander soup, saute onion and garlic in olive oil using a pan or your soup maker's saute function, or add them directly to the jug.

Then, add all other ingredients except coriander to the jug, and use the smooth soup setting.

After cooking, adjust seasonings, add coriander and blend briefly.

You can add more vegetable stock at this point, if you prefer to have a thinner soup. Serve with your choice of garnish.

  • Chopped fresh coriander.
  • A swirl of cream or coconut milk.
  • Croutons or toasted seeds.
  • A sprinkle of paprika or chili flakes.
  • Lemon zest or a squeeze of lemon juice.
  • A dollop of yogurt or sour cream.
  • Chopped nuts, like almonds or walnuts.

❄️refrigeration and freezing

This soup maker carrot soup is great for mealprep, as it stores well.

Let it cool completely, before transferring it to airtight containers and storing it in the fridge for up to 5 days or in the freezer for up to 3 months.

To use, let it thaw overnight in the fridge before warming it on the stovetop or using the microvawe.

👩🏼‍🍳a few tips

  • You can totally customize the flavours of your soup-maker carrot soup! Add a splash of cream or coconut milk for creaminess, omit the chili flakes if you do not like your soup spicy, or add your favorite spices!

Soup Maker Carrot and Coriander Soup

Ingredients
  

  • 1 tablespoon olive oil
  • 1 small  onion diced
  • 2 cloves garlic
  • 500 g carrots (approximately 1lb)
  • 600 ml vegetable stock (use more vegetable stock, if you prefer a thinner soup)
  • ¼ teaspoon cumin
  • ½ teaspoon salt use more, or less, to taste)
  • black pepper to taste
  • ½ of a small bunch of fresh coriander 

Optional (garnish)

  • red pepper chili flakes, fresh coriander leaves, croutons (to garnish)

Instructions
 

  • Use a pan or the saute function if your soup maker has one, to saute onion and garlic in olive oil. Otherwise, just add the oil, onion and garlic to the soup jug.
  • Add the rest of the ingredients, except the coriander, to your soup maker. Close the jug and press the smooth soup setting.
  • Once the cycle has finished, check and adjust the seasoning.
  • Add the coriander and briefly blend for 15 seconds to combine. Check and adjust the salt and pepper, if necessary. See notes below.
  • Garnish as preferred, ladle into bowls, and serve.

Notes

  • Add more vegetable stock, if you prefer a thinner soup.

    I always love carrot soup but never thought adding in some fresh coriander would really enhance the flavour. Tried adding the fresh coriander to the soup right at the end to get as much flavour as possible. I would like to do this again some other time!
