I made honey and garlic chicken wings the other day and have been obsessed with making chicken using my Instant Pot since then! But first I wish you all a very Happy New Year! I hope you all had a wonderful time with your loved ones over the holidays. Tom and I had a quiet evening indoors.
We had dinner with the kids, watched movies on Netflix, had some wine then watched the fireworks on the balcony. Well, to be accurate, 3 or 4 went off, with 2020 having been a special year and a curfew in place on new year's eve. It felt a bit strange because fireworks are a big part of New Year here in Germany. Oh well, I guess we can only be grateful that we made it to the New Year. So, let's make some chicken!!
I thought to make chicken wings again using my Instant Pot, but this time round Keto compliant and in 3 ways - buffalo, garlic parmesan, and lemon pepper!!
Ingredients
This segment explains the ingredients you will need to pressure cook the chicken wings, to prepare the three flavors, as well as how to make these seasonings.
Ingredients needed to pressure cook or steam the chicken wings
You will need the ingredients below to make the chicken wings:-
- 3.5 lbs chicken wings - about 1.5 kilos
- 1 teaspoon salt
- 5 cloves garlic - minced.
- 1 tablespoon minced ginger (optional).
- 1 ½ cups water
To prepare the buffalo wings
- ½ cup Keto suitable hot sauce such as Frank's hot sauce (no sponsorship or affiliation to them).
- ½ teaspoon paprika powder - smoked or sweet.
- 1 teaspoon garlic powder.
- ½ teaspoon red pepper flakes (optional - if you prefer it spicy).
- 2 tablespoons butter.
- ½ teaspoon salt.
Combine the hot sauce, butter, paprika powder, red pepper flakes (optional), garlic powder, and salt in a small to medium pot and place over medium heat. Allow to a simmer while stirring with a whisk. As soon as it begins to bubble, remove it from the heat, stir, and set it aside.
To make the lemon pepper seasoning
- 2 tablespoons lemon pepper seasoning.
- 1 teaspoon garlic powder.
- ½ teaspoon salt.
- ½ teaspoon baking soda.
- ⅓ cup melted butter.
Add the lemon pepper, garlic powder, salt, baking soda, and melted butter to a small to medium bowl. Use a whisk to combine then set aside for use.
To make the Garlic Parmesan seasoning
- ½ cup Parmesan cheese.
- ½ teaspoon salt.
- 1 tablespoon garlic seasoning powder.
- ⅓ cup melted butter.
- 1 teaspoon black pepper.
- 1 tablespoon chopped parsley - fresh or frozen.
In a small to medium bowl, mix Parmesan, salt, garlic seasoning powder, chopped parsley, and black pepper. Stir in the melted butter then use a whisk to combine.

How to make
Step 1: Pressure cook the chicken wings
- Combine the chicken wings with salt, garlic, and ginger. Add water to the Instant Pot then set the trivet in place and lay the chicken wings on top of the trivet. Close the lid, making sure to set it to seal and pressure cook for 8 minutes.
- While the chicken wings are cooking, proceed on to prepare the baking tray and rack. Line a baking tray with foil paper then lay the baking rack on top of it.
- Once the cooking time is over, allow the Instant Pot to Naturally Pressure Release (NPR) for at least 5 minutes, before doing a Quick Pressure Release (QPR).
Step 2: Combine with the sauce and seasonings
- When the pressure is completely gone, open the lid of the Instant Pot and use a pair of tongs to remove the chicken wings from the Instant Pot. Divide the chicken wings into 3 equal portions (you can use medium-size dishes for that so you can toss the chicken wings with the sauces to combine).
- Combine the chicken wings with the prepared sauce and seasonings as per the above instruction (as shown in the recipe card below).
Step 3: Broiling the chicken wings
- Transfer the chicken wings to the previously prepared baking rack, making sure to space them out.
- Open the oven and place the rack about 4-6 inches from the heat source of the broiler. Broil each side for 3-5 minutes. You can spoon again some of the sauce on top of the chicken wings, before turning.
Summary: First, start by cooking the chicken wings in the Instant Pot. Next, divide the chicken wings into 3 portions and combine each portion with one of the three seasonings. Finally, proceed on to broil the chicken wings, as it is a great way to crispen up the skin. You can skip this step but I highly recommend that you don't. Broiling takes about 3-5 minutes on each side, or until the desired level of brown is achieved.
Frequently Asked Questions
It is ok to have chicken wings on Keto. Just not the breaded, flour-coated, and deep-fried kind that you would normally probably buy at your favorite fast-food restaurant. You also need to bear in mind that some of the sauces used sometimes have sugar. I would advise you to make your own chicken wings. That way, you can always check up on the ingredients used as well as keep an eye on your carb count.

Instructions
INSTANT POT KETO CHICKEN WINGS
- Combine the chicken wings withsalt, garlic, and ginger. Add water to the Instant Pot then set the trivet inplace and lay the chicken wings on top of the trivet. Close the lid, makingsure to set it to seal and pressure cook for 8 minutes.
- While the chicken wings arecooking, proceed on to prepare the baking tray and rack. Line a baking traywith foil paper then lay the baking rack on top of it.

- When the pressure is completely gone, open the lid of the Instant Pot and use a pair of tongs to remove the chicken wings from the Instant Pot. Divide the chicken wings into 3 equal portions (you can use medium-size dishes for that so you can toss the chicken wings with the sauces to combine).
- Make each of the three Ketosauces as per the recipe instructions then combine with each of the chickenwings portions. Transfer them to the previously prepared baking rack, makingsure to space them out. If desired, set aside some sauce for the next step andas a dipping sauce.
- Open the oven and place the rack about 4-6 inches from the heat source of the broiler. Broil each side for 3-5 minutes. You can spoon again some of the sauce on top of the chicken wings,before turning.
BUFFALO CHICKEN WINGS
- Combine the hot sauce,butter, paprika powder, red pepper flakes (optional), garlic powder, and saltin a small to medium pot and place over medium heat. Allow to a simmer whilestirring with a whisk. As soon as it begins to bubble, remove from heat, stir,and set aside.
- Combine a third of the chicken wings with the buffalo sauce then lay then on a rack to broil (together with the other two portions). Broil each side for about 3-5 minutes, or until the desired level of crisp and brown is achieved then serve. Use any leftover sauce as a dipping sauce.
LEMON PEPPER WINGS
- Add the lemon pepper,garlic powder, salt, baking soda, and melted butter to a small to medium bowl.Use a whisk to combine then set aside for use.
- Add another third of the chicken wings to the bowl with the lemon pepper seasoning spice mix. Toss to combine then lay them on the baking rack to broil (together with the other two portions). Broil for 3-5 minutes until nicely browned and crispy looking. Remove from the oven then serve.
GARLIC PARMESAN
- In a small to medium bowl,combine Parmesan, salt, garlic seasoning powder, chopped parsley, and blackpepper. Stir in the melted butter then use a whisk to combine. Stir in the final third of the chicken wings and toss to combine.
- Transfer the chicken wings to the baking rack and broil on each side for 3-5 minutes (together with the other two portions). You can brush some of the sauce on top in between turning. Once properly browned, remove from the oven then serve.
Notes
- Nutritional information is based on a third of the chicken wings (since we are dividing them three ways), and the lemon pepper chicken wings only.
- Cooking time does not include the time it takes for the Instant Pot to come to pressure.
