5medium-sized russet potatoessliced evenly into ¼-inch (0.6 cm) rounds
1medium yellow onionsliced
1-2tablespoonmelted butter
1tablespoonolive oil
salt and freshly cracked black pepperto taste
¼cupfresh parsleychopped, optional
Instructions
Preheat your air fryer to 200°C (400°F) for about 5 minutes.
Add the sliced potatoes and onion to a bowl. Add the melted butter, olive oil, salt, and black pepper. Toss until evenly coated.
Arrange the potatoes and onions in a single layer in the air fryer basket using a spoon or spatula, leaving any released liquid behind in the bowl. See notes below.
Air fry at 200°C (400°F) for 12-15 minutes, shaking the basket every 5 minutes, until the potatoes are tender, golden, and crisp around the edges.
Garnish with fresh parsley, if using, and serve immediately.
Notes
Slice the potatoes evenly, about ¼ inch (0.6 cm) thick. A mandolin slicer works well for evenly cut slices.
Do not pour the potatoes directly from the bowl into the air fryer basket, as the released liquid can make them soggy. Use a spoon or spatula to transfer them instead.
