Ingredients

  • 5 medium-sized russet potatoes sliced evenly into ¼-inch (0.6 cm) rounds
  • 1 medium yellow onion sliced
  • 1-2 tablespoon melted butter
  • 1 tablespoon olive oil
  • salt and freshly cracked black pepper to taste
  • ¼ cup fresh parsley chopped, optional

Instructions

  • Preheat your air fryer to 200°C (400°F) for about 5 minutes.
  • Add the sliced potatoes and onion to a bowl. Add the melted butter, olive oil, salt, and black pepper. Toss until evenly coated.
  • Arrange the potatoes and onions in a single layer in the air fryer basket using a spoon or spatula, leaving any released liquid behind in the bowl. See notes below.
  • Air fry at 200°C (400°F) for 12-15 minutes, shaking the basket every 5 minutes, until the potatoes are tender, golden, and crisp around the edges.
  • Garnish with fresh parsley, if using, and serve immediately.

Notes

  • Slice the potatoes evenly, about ¼ inch (0.6 cm) thick. A mandolin slicer works well for evenly cut slices.
  • Do not pour the potatoes directly from the bowl into the air fryer basket, as the released liquid can make them soggy. Use a spoon or spatula to transfer them instead.
