Air Fryer Greek Chicken Breast

Ingredients

  • 2 skinless, boneless chicken breasts - each about 7 oz approx. 200g each
  • ½ cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 2 cloves garlic - minced
  • 1 teaspoon grated lemon zest
  • juice of half a lemon

Instructions

  • Add the Greek yogurt, olive oil, oregano, thyme, parsley, minced garlic, lemon zest, salt, and black pepper to a bowl. Stir until combined.
  • Add the chicken breasts and coat them well with the yogurt marinade. Cover and refrigerate for at least 30 minutes, or up to overnight for more flavor.
  • Grease or line your air fryer basket. Preheat the air fryer to 200°C (400°F).
  • Remove the chicken from the marinade, allowing any excess to drip off. Arrange the chicken breasts in the air fryer basket in a single layer.
  • Air fry at 200°C (400°F) for 12-15 minutes, flipping halfway through and brushing with the remaining marinade after flipping.
  • Check the thickest part of the chicken with a meat thermometer. The chicken is done when it reaches an internal temperature of at least 74°C (165°F).
  • Remove from the air fryer, sprinkle lemon juice on top and allow the chicken to rest for about 5 minutes before slicing and serving.

Notes

  • Marinating time: Even 30 minutes makes a difference, but if you have time the night before, marinate overnight for the best flavour and the juiciest result.
  • Cooking time: Cooking time will depend on the thickness of the chicken breasts. The chicken is done when it reaches an internal temperature of 74°C (165°F).
  • Don't skip the rest: Resting the chicken for a few minutes after cooking is what keeps it juicy. Cutting straight away lets all the juices escape.
