Menemen with Sucuk and Feta

Ingredients

  • 200 g sucuk (spicy Turkish sausage) - approx. 0.4lbs cut into thin rings
  • ½ onion diced
  • spring onion sliced - omit the green part
  • 1 400g (14.5oz can) diced tomatoes or 6 diced fresh tomatoes
  • 1 tablespoon cooking oil
  • 3 long Turkish bell peppers cut into thin strips- (alternatively, use 1 large bell pepper)
  • 3 eggs
  • 1 tablespoon paprika powder (smoked or sweet)
  • salt and pepper to taste
  • ½ teaspoon pul biber (Turkish red pepper flakes) see notes
  • 100 g crumbled feta cheese - approx. 0.2lbs
  • a handful of chopped parsley

Instructions

  • In a pan without any fat, sauté the sucuk, onions, and green onions, for 5 minutes.
  • Add the cooking oil, tomatoes, bell peppers, paprika powder, salt, and pepper to the pan, and continue to simmer for 10 minutes or until a thick sauce forms.
  • Crack the eggs into a small bowl, season with salt and a bit of Pul Biber (red chili flakes), and lightly stir to break up the yolks a bit.
  • Carefully stir in crumbled feta into the egg mixture.
  • Pour the egg mixture into the pan and gently stir to scramble the eggs.
  • Reduce the heat to a low, and cook covered for about 5 minutes or until the eggs are set but still fluffy then serve.

Notes

You can use regular chili pepper flakes in place of pul biber.
