These Ninja air fryer roast potatoes are crispy outside, fluffy inside, and delicious at every level. Enjoy them as a side dish or serve them as a starter, with your favorite sauces!

¾teaspoonsalt - to parboil the potatoes(or more, to taste)
¼litrewater - to parboil the potatoes
¼teaspoonblack pepper(or more, to taste)

Instructions
Wash, scrub, peel, and halve the potatoes. Quarter any large ones. Next, clean the peeled potatoes in cold water to get rid of excess starch. Remove the leaves of the rosemary from the stem, chop, and set aside.
Parboil the potatoes - see notes below.
Using a colander, drain and allow the potatoes to sit for 3 minutes. Shake the colander for a few seconds, to help chuff the potatoes, which also helps keep them crispy.
Preheat your air fryer to 200°C/400°F.
Tip the potatoes into a large bowl, top with olive oil, salt, pepper and rosemary, then toss.
Spray your air fryer basket or line it with air fryer parchment paper, for easier cleanup.
Next, carefully transfer the potatoes to your air fryer basket and roast for 20-25 minutes at 200°C/400°F until cooked through, and crispy edges form. Make sure to flip the potatoes midway through.
Serve as a side dish, alongside your favorite dishes.

Stovetop method: Add potatoes to a medium pot with cold water and 1 teaspoon salt. Bring to a boil, then cook for 7 minutes. Drain well.
Ninja Foodi pressure cooker: Add 1 cup cold water and 1 teaspoon salt to the inner pot. Pressure cook for 0 minutes, then do a quick release and remove the lid carefully.
Storage - Keep leftover roasted potatoes in airtight containers in the fridge for up to 3 days. Reheat at 350°F/180°C in the air fryer.
